Today we will drink sake from Gifu Prefecture.
The first Junmai Daiginjo from Funasaka Shuzo, a brewery in Takayama City, named after its creator, Touji Hiraoka Seiji.
We purchased it directly from the brewery during the Hida Takayama Drinking Festival.
The aroma is nutty and thick.
The mouthfeel is dry with low acidity, and the sweetness spreads.
The Daiginjo of Miyamagiku is also a good sake, but this one is also good.
