The aroma of cheese. The sweetness of malt-sweetened sake and the sourness of yogurt. Spicy aroma of ginger and cinnamon. It's quite unique, but if you think of it as a lassi, it's quite delicious in its own way. This doburoku is made from the whey produced during cheese making.
It is available at a direct sales place.
The glass-walled koji room, tasting room, and sales floor are located in a stylish general store in the downtown area of Nagahama, northeast of Lake Biwa.
