They call it "Jinden" instead of "Kanda." It is a new brand🍶 with a low milling ratio of 90%, using Kumamoto's native No. 9 yeast, and is a realization of the "Domaine Wasumi-cho all the way" where sake is brewed using only locally grown rice.
The aroma is subdued, but in the mouth, it has a robust umami of rice, a subtle fruity taste, and a nice lingering acidity that follows afterwards 😄.
It has a nice sharpness that is close to dryness.
