This sake had a very deep story. The person who created this new brewery is Yuki Hirai. Today is the day of the release of its new sake ^ ^. His parents' company, Kiku no Tsukasa Brewery Co., Ltd. had to give up the business a few years ago due to difficult business conditions, despite dramatic improvements in quality. However, they moved to Shiwa Town, the place where the family's roots were established, and revived the tsukuri warehouse left behind in the Hizume-Hirai Residence, a nationally designated important cultural property, as a craft saké brewery over 100 years ago. Sigma. The base lineup of Hiiroku Brewery bears the word "revive," meaning revival. All the rice used is Iwate rice. Polished white rice is brewed using the ever-evolving ginjo technique inherited from the Nanbu Touji clan and long-lasting low-temperature fermentation. The sake has a dignified and gorgeous aroma and a fresh sweetness. It is named for the endless possibilities of brewing sake. The taste is simply delicious. I hope everyone gets to taste it at least once.
