I have refrained from drinking since I fell ill in November, but I have finally lifted my drinking ban. I have been abstaining from drinking while stocking up on hiyaoroshi, so I will be consuming the stock for a while. This time, I bought a lot of "Abe" Junmai Ginjo standard sake, fire-brewed sake, at Saito Sake Shop just before the ban on alcohol consumption. It has a rice polishing ratio of 60% and a low alcohol content of 13°. The aroma when the bottle is opened is light and not sweet. When you take a sip, it has a soft, soft mouthfeel with a hint of sweetness, and an acidity that is not too assertive. While the light aftertaste spreads, a dry slight bitterness from the alcohol occupies the mouth, inviting the next sip. It is best served cold. We will be spending a leisurely drinking life with Takachiyo, etc., which we have been putting aside for a while.
