Since my father-in-law and mother-in-law came to visit, we went to eat fugu, a winter delicacy in Osaka 🐡.
Fugu and sake go hand in hand 🍶.
The first glass of Shuho Daiginjo Harazake was also insanely delicious ☺️ but I failed to take a picture of the bottle 😅.
The second sake I drank was this Black Imadaiji Ultra Dry Junmai Sake from the Imadaiji Shuzo brewery in Niigata.
It is a junmai sake made from 100% Gohyakumangoku with a rice polishing ratio of 65%.
The Imadaiji Brewery interprets its trade name, "Tsukuru Imadaiji," as "creating ways to enjoy sake that suit the current times," and expresses the appeal and enjoyment of local sake in line with the current times.
The brewery is also active in disseminating information on SNS, making it a very friendly brewery.
I look forward to it because I don't drink Niigata's light and dry type sake very often 😄.
The exterior is clear crystal with a sense of transparency.
The aroma is almost unimpressive, partly because the sake was well chilled.
On the palate, it flows in and spreads out extremely smoothly, and then quickly passes through the mouth and is crisp and clean.
There is a slight glimmer of lingering rice flavor on the tongue, but it just flows along nicely without any cloying taste at all.
This is real light and dry 😳It is like iwashimizu when served cold. ☺️
I also got a fin sake at the end, which made me happy 🐡.

I only uploaded the photos of the sake due to the picture limit, but I enjoyed all of them, including the boiled skin, tessa, karaage, and tecchichi 🐡☺️ I found out that I also like light and dry 🍶I must drink it in the future 😅.

Hi Gyve 😃I loved the Hire Sake, which was first seared and then steamed in sake to lock in the aroma and flavor. ☺️ I recommend Fukushima Ajihira Fukushima Honten, although it's in Osaka! They also have Yoshinogawa, Nozomuchi Naohiko, and Ryuryoku 🍶.
