We finished the day with Mikotsuru Junmai Ginjo Yamae Nishiki Unfiltered Nama-shu (Suwa Mikotsuru Sake Brewery/Nagano Prefecture).
It was the most gorgeous and darkest positioned sake on the restaurant's taste map of the day 🍶.
Suwa Mikotsuru Brewery was revived in 2018 after once being out of business.
For only the second time, this junmai ginjo Yamae Nishiki fire-aged sake was not only awarded the first place trophy in the junmai ginjo sake category at IWC 2021, but also won the Champion Sake, the top prize in the entire SAKE category and the No. 1 in the world🏆.
This Junmai Ginjo-shu is made from contract-grown Yamae-Nishiki, and this time it is the unfiltered, unpasteurized version.
The appearance is clear crystal.
The aroma is gorgeous yet calm, juicy and fruity. ☺️ There is also a hint of rice in the back.
It has a smooth mouthfeel, with a juicy sweetness with freshness at first attack.
The dark sweetness spreads over the tongue, and the acidity with a hint of bitterness spreads softly and gently.
It is clean without any cloying taste, fresh, fruity sweet and acidic and tight.
Ah, this is delicious 🥰.
The analogy is inappropriate but if you like 🐢, you will definitely like this taste 🍶.

Mikotsuru is a brewery with a checkered history. After Hishiyu Brewery, the original brewer, went bankrupt, Ban-ei Transport in Fukushima took over the business, brought in a new master brewer, updated the facilities, and became Suwa Mikotsuru Sake Brewery 🤔 It is delicious, so please try it!
