Iwate Pref. Shiwa County. Shiwa Brewery Co. Shiwa Junmai Ginjo Ginki-Otome Unfiltered Unrefined Nama Sake This is the 7th bottle of this season's SHIHU ✨. It is made with "M7" yeast, which was developed on a trial basis, and Iwate Prefecture's preferred rice for sake brewing, Ginotome. Serve cold. The top-tasting aroma is a bit of ginjo aroma, followed by a strong alkaloa like magic. The acidity is too tight on the first day, and there's a short, dark sweetness that is a bit unbalanced and I had to stop drinking 💦. Tried again on day 3. It still starts with the sourness, but it's not as sour anymore. It also has a sake-like taste and finishes with a refreshing feeling. Ingredients: rice (domestic), rice malt (domestic) Ingredient rice: 100% Iwate-grown Ginotome Rice polishing ratio:55 Alcohol Content:15%. Sake meter degree: +4 This season's Murasaki Uchu is mostly junmai ginjo specs, and overall it has a strong acidity, and I think the junmai daiginjo specs of the previous season were better. I think the Junmai-Daiginjo specs from last term were better. My personal ranking of my impressions of purple space.
