Takeba is brewed by the Kazuma Brewery, which was also severely damaged, but other sake breweries cooperated to rescue the unrefined sake that survived the disaster and release it as part of the Saved by series.
This is Yoshida Sake Brewery's version.
The appearance is yellowish crystal.
The aroma is full of freshness like that of a nutritional drink, with a moderate and mild aroma of melon and banana, and a very nice aroma with a hint of alcohol.
As the temperature rises, the ginjo aroma of melon with a refreshing koji sweetness and sourness is sweetly fragrant.
On the palate, there is a faintly tangy texture with a slight chiliiness of gasiness.
The gentle yet mellow sweetness is fully expressed with a firm and clean umami, from which a gentle acidity spreads smoothly and finishes off.
It has a good sharpness, and the lingering aftertaste is moderate and gradual.
As the temperature rises, the beautiful sweetness and umami richness are quickly covered by a pleasant light acidity that spreads quickly and finishes.
As is typical of Noto sake, it has a beautiful, rich sweetness and umami, and a pleasant acidity that adds to it.
It is a wonderful sake. ☺️
