アラジンYama no Kotobuki Freix 2 is 4MMP (4-mercapto-4methylpentan-2-one). It is a major ingredient in white wine made from Sauvignon Blanc and other white wines. This is one of the alcoholic beverages that led to the attention of 4MMP in sake🍶. I was told by the liquor store (cheese shop) where I purchased it that it tastes best on the third day after opening the bottle. The first day of opening the bottle. The aroma is a definite 4MMP aroma with strange nuances such as rice before polishing. It smells of white wine, sherry, and grapefruit with little bitterness or sweetness. The mouthfeel flows in like water, with a delicious flavor on the tongue and a white wine-like acidity that spreads in the mouth with a bang, and a cute, stimulating acidity that cuts from the back of the throat to the nose. The lingering aftertaste is surprisingly long and astringent on the tongue. The lingering aroma and the returning aroma are truly those of a white wine. 3-5 days after opening the bottle. The aroma is a clean 4MP with fewer extraneous nuances. On the palate, on the 3rd day, you can taste the fresh rice-like flavor, but on the 5th day, the white wine-like flavor increases, and the rice-like flavor is somewhat reduced to a transparent grain-like nuance throughout. It is definitely a sake that has expanded the horizons of sake 🍶. I drank it all up with great interest: ☺️
