There have been some changes in the environment, but we are doing our best 😤.
I decided to make this one for the first bottle of the new year 🍶.
Seijitsu" is a name that expresses our wish to be there for those who are starting a new journey or celebrating a milestone "Hare-no-hi" and to give them a boost.
It is truly a spring ale 📣.
The sake rice is a hybrid of Yamadanishiki and Akaban Omachi, aiming for the best of both worlds: fullness and complexity 🌾.
It has a clear crystal appearance and gas bubbles on the glass.
The aroma in the low temperature zone is sweet pineapple and acidity with a burst of cideriness and a veil of rice aroma like freshly pounded rice cake.
Petite and lively gas stimulation 🫧 in a smooth flow.
The rich sweetness comes on the tongue and spreads out while balancing with the acidity that comes later, making it juicy.
The remnants of gasiness and astringency can be felt on the tip of the tongue, leaving a beautiful flavor, while the acidity is slightly assertive and passes from the back of the throat to the nose along with the gasiness.
The finish is long, with a slight bitter astringent after-flavor.
As the temperature range rises, the smoothness increases, the clarity of the sweetness and acidity increases, the clean umami is firmly felt, and the lingering assertion of bitterness increases and tightens to bitter.

Last year's best of Kanjiku was Koyama Shoten's special order Orikagarami from Haruhi, so I had high expectations for it......it was still delicious ☺️
