Tonight's sake is Ikezuki Junmai sake from the Toriya Brewery in Nakanotomachi.
It's been quite cold in Hakata the past few days, so we'll be serving it warmed up!
The aroma is mild and gentle, with a hint of umami.
It was just as it should be on the palate!
Very gentle sweetness and umami!
It's very pleasant to feel it slowly drain off from the tip of the tongue...
There is a word that describes the regional characteristics of Noto.
Noto is easy, even to the soil" is a phrase that describes the local character of Noto.
I also like this phrase because it well describes the simple humanity of the people of Noto.
I think this sake was brewed by a Noto sake brewery in the Noto climate, which is why it is so gentle.
I heard that Toriya Brewery is a small sake brewery, but I wonder how much damage they suffered from the earthquake❓
I know it's selfish of me, but I would love to drink Noto's sake again, which is full of mercy, so I hope they will revive it!

I've never had much luck with Noto sake, but there are 11 sake breweries in Japan.
None of them have announced that they are going out of business, so as soon as I can buy some, I'll buy it!
I would have loved to go to the Wajima morning market, but alas!
