So, I went to my first brewery, Akishika Shuzo's Akishika Sake Brewery again!
This time it was a Junmai Senju sake!
Let's have it right away!
The first thing is the aroma. I don't really notice the aroma.
In the mouth, it has a traditional sake feel, but the mouthfeel is clean, with a slight sweetness, complexity, and a soft bitterness that finishes off the palate.
You can also taste the umami.
The lingering aftertaste is very smooth and easy to drink.
This is delicious in its own way!
It goes very well with a meal.
I usually like sweet sake, but sake with umami taste is also delicious!
I felt that Junmai sake is really delicious after all!

I attended last year's brewery opening and was under the impression that Akirika was very dry, but it turned out to be a very umami sake 😇.
