We started with a comparison of two Jikin sake!
The two are from the Yoshikawa district in Hyogo prefecture, which is famous for its Yamadanishiki, and the Tojo district, which is famous for its Yamada Nishiki, and they are both made to the same specifications (Junmai Ginjo).

This Yoshikawa Yamadanishiki has a mild and reserved aroma.
The sweetness, umami, bitterness, and acidity are all moderate, and the impression on the palate is that it has a clear finish as a whole.
