Overall 9 (out of 10) I bought this from Okazaki Sake Brewery😃. According to the description. "Sake brewed in Shinshu from Yumemizuho rice grown in Noto on behalf of Kazuma Sake Brewery, which was affected by the Noto Peninsula earthquake and has been working to brew all of its sake from rice grown in Noto. Please enjoy this sake while thinking of Noto. According to the brewer, "Please enjoy this sake with a thought of Noto. Delicious 😋. The slight tingling sensation on the tongue at the moment of drinking and the umami of the rice that makes it less noticeable. After that, it fades out with a slight sweetness without changing its composition 😋. I really feel that sake is a traditional Japanese craft that represents Japan, and that such changes in taste can be created with only basic rice and water until the sake is swallowed in the mouth. I am impressed🥺🍶. I had it chilled. I was impressed by the aroma of this sake. -Aroma: Ginjo aroma👍 -Aroma: A slight sweetness and spiciness that comes through to the nose. Taste sensation The higher the number, the stronger the taste (5 is the maximum). -Spiciness: 3 at the beginning → 2 in the aftertaste -Sweetness: 0 at the beginning → 1 in the aftertaste -Sourness: 1 at the beginning → 0 in the aftertaste -Bitterness: 0 at the beginning → 0 lingering 0 -Astringency: 0 at the beginning → 0 lingering 0 -Rice flavor: 2 at the beginning → 2 in the aftertaste Mouthfeel I felt】→3 Smaller number = light and smooth Bigger number = thicker

Good evening, Tsubu 😃. We, too, were moved by the bond between sake brewers who wish for Noto's recovery, and were grateful for the food: ☺️ This is our second time here and we always leave with a walk through this old town: ☺️
