Chiyozonoen Brewery was also at the Japanese Sake Festival, so I was going to drink "Taido" which I didn't remember from the Hebereke, but they didn't bring it 🤣.
I wanted to try their specialty red sake first and forgot to ask them if I should drink this 😅.

Chiyono-en Excel
Higo Tokusan Aka-shu is a local specialty made using traditional methods, and tastes sweet and somewhat like Mirin.
Hoshi, Cat, and Junmai Daiginjo" is a sake made in the image of Tera, a stray cat who became the signature cat. The label is cute and the sake is delicious.
The "Kono Kuni Sake" is made from rice that is not part of Morikuma-san's rice crop. It is a good value for money, and is a pure rice sake with a 78% polishing ratio.
Junmai Ginjo Kumamoto Jinryoku" has a slightly bitter taste.
Chiyodaien Excel" is my favorite, a refined sake that has been aged in the bottle. It has a nice mouthfeel and does not have much of an aged feel. The price is also very reasonable.

The brewer talked quite passionately about the meaning of the cork bottle and the aging process, so I think it might be Excel or Junmai Daiginjo Shuubai for drinking this 😊 He also seemed happy to talk about his lost cat, so maybe that one 🤔.

I was surprised to see your review of Chiyozonoen's akashu 😅 since Zuitaka's akashu is the major one in my hometown.
I have the impression that Taido, including the seasonal sake, is beautiful with a strong gin flavor 😋.
