You can truly feel the spring in Nasu.
Junmai-Ginjo that was vented in late January.
After the first vatting in late January, we let a 1cm layer of orikori (a kind of ooze) get mixed in.
It is then immediately heated in the bottle and matured for about one month.
Ona has a strong image of dryness.

When the lees is mixed, it becomes light and refreshing...
A little bit of spiciness remains, but it has a calm mouthfeel.
