This time it is Houmon Hakutake Josen. This sake is from Tsushima City, Nagasaki Prefecture. I got it at a previous event and enjoyed it so much that I popped it in. They sent it to me in a blink of an eye 😆. Crystal appearance. The top aroma is sweet and brown sugar like. Mild mouthfeel. The taste is impressive with soft brown sugar-like sweetness and caramelized acidity, with the umami of rice flowing behind it. The alcohol is strong, and the second half is tightened by a tangy, bitter taste. When heated, the alcohol attack becomes milder and the umami flavor expands. This time, I tried the fugu fin sake. I want to make my own delicious fin sake! I looked it up on the Internet and put it into practice. (1) Sear the fins well over low heat until a good aroma is released. Sear the fins well, especially at the base of the fin, so that there is no fishy smell. 2) Prepare hot sake. Pour the warmed sake over the seared fins and finally light a fire to release the alcohol. I was afraid to light the fire at the end. I was afraid to light the fire at the end, so I tried to do my best with a Chakkaman, but it didn't turn out well💦. The result was a delicious aroma of fins from the moment I opened the lid. The sake was delicious as well, with the broth from the fins melting into the sweet sake flavor!
