I found Yamazan's Junmai Aizan, which was rumored to be only available this season, and bought it as soon as I found it.

I drink it with cold sake.
When the bottle is opened, there is a long sizzling sound of gas.
The glass has a recognizable and considerable amount of microbubbles adhering to it and coming up a bit from the bottom.
Color is clear and almost colorless.
The top aroma is melon, melon, melon, a hint of greenish, and a bit of berryiness.
The mouthfeel is slightly carbonated and sizzling right after opening the bottle.
The taste is impressive from the start, with a strong acidity that encompasses sweetness and bitterness.
It has a mild, weak sweetness, with a more robust sourness and bitterness, and a bitter aftertaste that is typical of Aizan, and is rounded out by an alu feel.
I have always felt that Yamazan San is good for its understated modernity.
The Joyo I drank the other day was also from Hyogo Prefecture, so I wonder if it is easy to grow and grows well as well as Yamadanishiki.

I guess it's better to drink it early as it has a good microcarbonation. I'm jealous that you bought it in a four-pack. I'm going to Nagano this week, but I doubt there will be any left at the store where I drank it last time.
