I opened a bottle of the Shinsei Earth I got last summer 🍾 The label on the back said it should be kept refrigerated for 3-5 years, but I couldn't resist 😖.
As usual with Shinmasa, it has a nice balance of umami and acidity, with a hint of wood vat flavor 😋.
Compared to the others, it has a clearer and fresher feel to it 🍏.
It was delicious ^_^
