After enjoying a sake comparison of two Jikin nama-shoto wooden casks, we had the Shinshu Kamerei, which was our original goal 🍶.
It's a Shinshu Kamerei Hitogokochi Unfiltered Nama Sake, which I failed to buy the other day by a narrow margin.
It was a very fresh one manufactured in November 2023, and Mr. Chuin couldn't resist to open the bottle 😁.
The appearance is warm crystal.
The aroma is like a freshly pounded rice cake and a modest and refreshing sourness, with a good sense of freshness. ☺️
On the palate, juicy sweetness and acidity spread in good balance, and the acidity is refreshingly sharp after the mid-palate.
The overall freshness is strong, and the juicy hints are pleasant, and the slight alcohol content is refreshing.
The acidity lingers in the aftertaste.
It is still very delicious.
I love Shinshu Kamerei no matter what time of year I drink it 😊.
According to Mr. Kawada of chuin, this Shinshu Kamerei Hitogokochi Unfiltered Nama Sake is scheduled to be shipped from the brewery again in mid-December, and in larger quantities than this time 🤔.
I would love to try some at home if I have the chance, but my liver and home fridge can't keep up with the sake I want to drink this time of year 😅.
