A nice bottle of Jishin that I kept to drink on some anniversary. I ended up using it on a daily basis 😄.
It is a daiginjo made from Hakutsuru Nishiki, a long time product of the Hakutsuru Shuzo brewery🌾.
So, expectations are high.
The aroma is gorgeous, with an elegant sweetness, good acidity and bitterness. As one would expect from Jikin, it is a wonderfully well-balanced sake 🍶.
I knew I should have opened it on our anniversary 😆.
