Polishing ratio 100%! Inspired by Nara Brewery's UNDERWATER (a beer made with Kaze no Mori brewing water, No. 7 yeast, etc.). (By the way, Nara Brewery even used soyashi-water this year!) Steaming is a process that alphasizes the starch in the sake rice to enhance the action of koji enzymes and make the rice easier to dissolve. The brewery succeeded in brewing sake with brown rice without polishing it at all, based on the unexpected idea that roasting rice could be used like beer without steaming! This roasted brown rice brewing method is called the Amorphous method.
In the fourth year, a small amount of white malted rice was added in order to reduce the graininess of the sake and to give it more body. Amber in color, it has the appearance of a lager beer without foam or a lightly aged whiskey. It also has a top-tasting aroma like sour pickles or beer after the foam has been released. It is an aroma I have never felt in sake, at least not before. The first touch is sake sweetness and a light gasiness. From there, the acidity and clean umami typical of Bodai-Hashimoto sake spread out with a unique burnt and smoky taste, and then it finishes in a flowing manner. The after-flavor is exactly like the lingering bitterness of beer. It's as close to beer as you can get, but it's definitely sake 🍺🍶. I honestly thought it was delicious ☺️
