I really wanted to make tempura of albacore at home, but I was wondering what would happen if it exploded... so I delayed the opening of the bottle.

On the palate, it's citrus and melon with a hint of sweetness from the rice.
The foam seems to mask the bitterness a bit? ...I just wanted to say "masking".
The supernatant from the next day has a rich mikan 🍊-ness to it, but with a slight bitterness in the aftertaste. But the aftertaste is a bit bitter and crisp.
When mixed, the sweetness becomes rice and it feels a little more refreshing. I think I like it better when mixed.
I was told at the liquor store that it would taste good even if left for a week or so, so I left a little bit of it in the bottle with a different one in between.
...Oh! This feels similar to my master's Hanazumi nigori. I'm glad that I somehow understand the feeling that the seniors described in their reviews.
It's great that you all can sense it right from the start.
By the way, I was scared of the explosion of the albacore tempura, so I decided to wrap the albacore in gyoza skin and deep fry it as a compromise 🥟.
I ate it at home, and it was delicious with sake, so I guess it's OK! I want to try it next time.
