This is the first time I've had Senbonnishiki's unfiltered raw Ginjo since April.
It's been a while since I've had a Senbonnishiki unfiltered ginjo.

The ginjo aroma is subdued but beautiful, mild and fruity.
In the mouth, it has a freshness that you would not expect from a fire-hardened sake.
The elegant sweet flavor spreads in the mouth.
The sweet and umami taste is supported by a beautiful and crisp acidity that is felt only a little later in the taste, which is well balanced and produces a freshness 😆.
The modest bitterness is also nice ✌🏻. The depth increases.
It goes down the back of the throat with a beautiful sharpness.
I think the balance of Jikan is superb.
It is gentle and elegant with a beautifully formed laser chart.
It reminds me of the beautiful mineral-rich "water" of Nabari.
I had a bottle of it over a period of days.
The sweetness increases and the balance around the third day is unbearable.
I feel like I can keep drinking it forever.
It's delicious.
