Koubo No.7
A special junmai sake (non-filtered, unfiltered sake) made with Kyokai No. 7 yeast (Masumi brewery) and Toyobai rice, released on 7/7.
There is actually a Koubo No. 6 released on 6/6 using Kyokai No. 6 yeast (Shinmasumi warehouse), but we didn't have it 💦.
It is a beautiful sake with a full-bodied sweetness and bitterness.
