The same fruity aroma as on the top palate, the robust umami of rice and moderate sweetness spreads piquantly with a core of acidity and finishes with a hint of bitterness and a slight spiciness of alcohol.
It is fresh and juicy and gives an impression of overall volume, but thanks to the assertive acidity, the slight feeling of gas, and the spiciness of the alcohol, it all comes together nicely.
It goes well with strong flavored meals and is also delicious on its own.
It goes well with sake lees soup made with sake kasu (sake lees) and pork kimchi.
