This is one of the long aged sake that Koueikiku has been secretly working on since they revived and started brewing 3 years ago.
Here is the message from the brewer
Aged for several months in "Amontillado" sherry casks, which are characterized by their hazelnut-like aroma, before bottling. It was then aged in ice temperature for another two years.
The sake used was brewed exclusively with Omachi to increase its sweetness.

And aged in ice temperature for 2 years? 😵.
I don't get it anymore... what kind of taste is that...
So I opened the bottle with 2 cheers and 1 bow....
This is... a noble rot wine 🤔.
It has a rounded and slightly thickened mouthfeel. Soft taste.
The sweetness in the mouth is soft. The nose is full of fresh sherry and oak aroma.
It is 12 degrees Celsius, so it is very quickly and easily 😱.
It was delicious 😋.
