This year's (drink), this year's (check in) ✅ 🍶 Part 2
Due to being busy towards the end of the year, I've accumulated a lot of notes on drinks that I haven't checked in 📝.
Cleaning up the house is a hassle, so I'll at least clean up the check-ins 🧹.
I will come back to remember the aroma and taste 🤔
I compared the unfiltered raw sake and the fire-brewed sake of Shinshu Kamerei Hitogokochi.
This one is a bottle because it is fire-aged 🍶.
My note was mainly a comment on the comparison with the unfiltered nama sake I drank earlier.
Rich rice aroma like freshly pounded rice cake or freshly polished rice.
The fruity flavor is hidden further down in the bottle.
The overall flavor is less vivid than that of the unfiltered raw sake, with no sharp edges and a gentler taste.
The gasiness is intoxicating.
The vividness of the sweetness is restrained, and the gentle acidity and umami fullness can be felt.
The hint of rice aroma is rich.
Hitogokochi Junmai-shu, the standard sake of Shinshu Kamerei, is still gentle and delicious 🍶.

I'm glad I did it because it was interesting to compare the unfiltered raw sake and the fire-aged version of the same new sake, as I could feel the differences more than I expected 🍶.
I'm not going to finish the check-in cleaning either, so the rest will have to wait for next year! I guess it will be next year 😌.
