I was in Kanto for a short stay for work training.
I took advantage of this opportunity to visit the Yajima Sake Shop in Chiba, which I had always wanted to visit.
I was able to enjoy some sake that is hard to find in my daily environment 🍶.

The aroma is floral and fruity with a gentle sweetness and perfume-like nuances.
Honey apple, ripe white grape, white peach and melon.
The rice aroma, which is similar to that of white dumplings, is also relatively rich.
The entry is firm and sweet.
It has a rich sweetness reminiscent of fruit candy, and the acidity is quite gentle.
The extremely soft and mellow sweetness spreads with a slight gasiness, and the sweet and gorgeous overtone is lush with a hint of manicured aroma.
From the mid-palate, the sweetness is clear with a slight oily nuance.
The bitter astringency is rather firm at the end and finishes off as it should.
On the first day of opening the bottle, it was dark, gorgeous and glossy.
On the fourth day of opening, the manicured aroma was gone, and the taste was more clear with a rich sweetness and a hint of acidity, accented by a beautiful astringency.
I liked the more forward clarity of this day the best 😊.

Yajima Sake Shop, Kangiku is a local Chiba sake and Sake Mirai is a true wonderland where you can buy it with no purchase limit!
