This Ubusuna Gonohyunbrew is made from Yamadanishiki🌾, rice grown in the Kikuchi River basin without fertilizers or agricultural chemicals, and brewed in a "wooden vat brewing process" using a "raw yeast" sake mother.
The bottle is opened with a "spontaneous", champagne-like opening 🍾.
The appearance is a slightly pale golden green.
The glass is filled with bubbles and coarse bubbles.
The aroma is fresh and has a wooden vat feeling.
The first impression is of wood vat.
Aromas of orangey citrus, banana, young blue melon, and Japanese pear.
Soupy herbal and whey-like raw yogurt.
Rice aroma of white dumplings.
Smooth texture, with a shrieking, lively gasiness 🫧.
Moderately subdued sweetness and gently exuding acidity spread with a rich wooden vat feel.
The sweetness deepens slightly in the mid-palate with a hint of grapeiness and a beautiful bitterness mixed with a pear-like fruitiness.
A soft gassy sensation escapes from the top of the tongue, and with it, a dryness that flows through the palate and finishes crisp and clean.
The lingering medium-long finish has a wood vat feel with a pleasant bitterness.

It's shwarmingly fresh, goes in smoothly and spreads a gorgeously nourishing sweet umami, and also leaves a lingering wood vat feeling.
