The aroma is mild, creamy lactic acidity.
The balance is firm but not too strong or weak.
The mouthfeel is light and clear.
The sweetness is a suppleness and fatness derived from the rice, and I think that the character of Omachi rice comes to the forefront rather than being compared to anything else.
The bitterness and richness appear as you drink it, and it has the feeling of a kind of accumulated bitterness and richness, somewhat like a sake yeast.
It's a sake to be drunk cold, but with a good taste for each cup, and I will digest it slowly. ☺️
