The best Yamada-Nishiki is polished to 35%, and only the best parts of the unrefined sake are selected and pressed after a long and slow fermentation at low temperatures using the traditional covered koji method.
The taste is soft, sweet and delicious, with no bitterness or other unpleasant tastes 🥰.
It's like a gently sweet grape 🍇.
