Kumakichi
It's getting hot, so we opened a bottle of Romain's Daju. It has a very mild sweetness and umami because it is fire-brewed twice, and it is very crisp and dry when drunk cold. I thought it might be good as a hot sake, so I raised the temperature and found it was even sweeter. As we raised the temperature, the sweetness remained, but the dryness became more pronounced. It was a dryer version of roman than the gorgeous roman we usually drink. Rice polishing ratio: Koji rice (20% Gohyakumangoku), Kake rice (72% Yumenokou, 6% Himenomochi) *% indicates frequency of use Alcohol content: 15%.
