Winter Fireworks Junmai Daiginjo Unfiltered Nama Sake The first day of opening the bottle Gulping down a glass of sake Tranquil, clear and fruity rice aroma, clear and subtle umami sweetness, a little bitterness and sweet aroma through the throat, long and pleasant aftertaste. Mokkiri It also has a clear rice aroma, a moist umami sweetness, a long pleasant aftertaste, and a sweetness that remains on the tongue at the end. Both have a trip time of about 20 seconds. Compared to the hi-ire sake, it is more like the fresh and clear umami sweetness from nama-zake than the characteristic sharpness. 2nd day Gulping down a saké The gorgeousness of the aroma and taste fades and the umami sweetness becomes more robust. Mokkiri The aroma also becomes less gorgeous, but the taste is more robust and especially the umami is stronger. 3rd day Gulping down the sake The umami has settled down and the sweetness has become stronger and mellower. The bitterness at the end is also stronger and fresher. Mokkiri The umami and sweetness have also mellowed, and there is no bitterness at the end, but a mild aftertaste. It may be a little like "Hanayo" 🤔.
