I know the name of this sake, but I've never had the chance to try it.
The label only says unfiltered raw sake, but it seems to be undiluted sake.
It gives a fresh and sweet impression on the entry. It has a beautiful mouthfeel. It's modest and has little assertiveness, but it's easy to drink and will appeal to everyone. The alcohol stimulation comes slowly in the second half. When you roll up the label, you can see a picture of sushi.
It's a bit peachy. Maybe it's just my imagination, though. I was expecting Hidakami to be a dry sake, so I was happy to find it had a strong sweetness.

I've never seen boiled hamaguri as a sushi item because I'm from Kansai. I like it, but I rarely see kohada in 😿
