This time it's MIYOI ORIGIN from Adachi Nozawa Brewery. Mr. Adachi was a crafan who wanted to build a brewery in Takatsuki City, Osaka, and we supported him📣. As a result, he opened a brewery in Takatsuki City's Tomida Danchi! Tonda is a historic sake production area, and setting up a brewery in that housing complex is a great idea 💡. This sake is made from Koshihikari rice grown by Mr. Adachi with raspberries added. Lightly chilled. It has a slightly reddish, thin orikara with fine bubbles on the outside. The top aroma is of greenish strawberry acidity with a hint of rice. The mouthfeel is gentle. From the refreshing acidity reminiscent of yogurt, the aroma of soft raspberries and a mild milky sweet flavor gently melts in the mouth. The overall taste is refreshingly fruity with a good bitterness with a sense of effervescence. After drinking this sake, we visited Adachi Farmer's Brewery. They told us that although raspberries were used in this sake, the fruitiness was kept to a minimum to make it more like a sake, and that the fermentation was quite active and they were struggling to suppress the yeast bacteria, so the taste was more light and delicate. I was also surprised to hear that they use an ordinary coin-operated rice milling machine for rice polishing! We also toured the brewery. I was also given a tour of the brewery and was impressed by the ingenuity of the brewery, including the use of a mezzanine floor as a koji room so that everything can be brewed in a single room in the apartment complex.

Good evening, Aladdin. I heard that there were a lot of hardships from the time of the crafan until the completion of this sake, and the inside of the brewery was full of packing materials and they desperately shipped the crafan's sake. I am glad I went 😊.

Good evening, Ofuji-san. Tomita Danchi is hard to get to by bus, but you might be able to get there from Ofuji-san's house. You can drive there and use the café only for amazake (I did), and by all means, please go and have a look.
