I eat it with all my heart, feeling a sense of regret and wastefulness of opening such a wonderful sake on a weekday when I am so exhausted. This sake is made from 100% Gohyakumangoku rice from the Kamiajimi district in Miyama, Fukui Prefecture, milled to 50% and 60% Kakemai rice. It is a fresh product that can only be made at the vat. The word "Zuichi" is used on the label to indicate that this is a freshly brewed sake from Tsuneyama's all-out effort to brew the "best" sake using the "best" rice. It is rich in flavor, full-bodied, and deep. It certainly lives up to its reputation for apricot-like sweetness. It is well balanced with a crisp finish.
