Enjoying sake at the inn in Ureshino Onsen.
Three kinds of Daiginjo recommended by the inn.
I've never had any of the brands, so I'm looking forward to it😊.
First, Hizen Toji
It's a Daiginjo, but it's dry because it's made with hard underground water.
I'm going to drink it with a little sweet soy sauce from Kyushu while eating sashimi.
Skepticism
It is made from Yamada Nishiki, a rice suitable for sake brewing, using subsoil water from the Sefuri mountain range, and is made in the same way as sake entered in ginjo competitions, giving it an elegant taste and aroma.
