We savored sake from Bitchu Kiyone by the Takahashi River.
We visited the brewery last month on the occasion of a national holiday and bought some. It may have been a holiday, but they were happy to accommodate us. I'm sorry I didn't check beforehand...
This sake has a plus sake content, but the taste is more like a mellow sweet Bicchu style.
Reflecting the sake brewer's aim to make sake that can be enjoyed with food, it was a beautiful sake with a flavour that was not too overpowering, and that accompanied the food well.
It's not a strong supporting actor like Kenichi Endo or Susumu Terashima, but a supporting actor like Kiyoshi Kodama or Leo Morimoto.
A few years ago, Yoikigen decided to focus on small-batch, high quality sake brewing. I'm looking forward to their future development.
