A famous restaurant in Tochigi prefecture. A bottle produced by Mashidaya. All Yamada Nishiki produced in Mibu-cho, where the shop is located, is used in this Junmai Daiginjo Hiirei. This is a bottle produced by Iinuma Meijo, the brewer of "Figure". The aroma is like ripe melon or pineapple. It is very gorgeous. Quite a gorgeous fruity feel. Fresh and slightly fizzy, like a raw sake, although it has been heated. The sweetness lasts until the mid-palate, but as soon as you drink it, the sharpness goes right through the nose, and the sweetness doesn't linger in the aftertaste. A tingling bitterness lingers on the tongue. This is a sake where the sweetness comes first. This type of sake is delicious, but it is always difficult to find the right match with food.
