Today I'm going to drink a sake from Nagano Prefecture.
I bought this sake at a brewery in Kiso Town when I went for a drive to Kaida Kogen.
The official name is Kiso Yoshinaka Junmai Sake "Princess Michiko" with rose yeast.
It is a junmai-shu brewed with a flower yeast isolated from a rose "Princess Michiko" presented by Her Majesty Emperor Michiko when she was Crown Princess.
The rice used is 100% Ginbukietsu produced in Shiga Prefecture.
The aroma has a pineapple-like ginjo aroma.
It has a refreshingly sweet taste with little acidity.
