This sake is from Nada-Nishinomiya Township. It does not seem to be available in the market very often, so I bought it directly from the brewer. Quite a coloring. Hinekoso. Hinekoso is a strong aroma that comes over you as soon as you drink it. The sharp pungency that gradually grows and disappears like a lapping wave. The sense of maturity is quite strong. Even when combined with a side dish, the spicy aroma and pungency are quite strong. It is like an old-fashioned sake. How about if you warm it up? The sweetness is very strong in the mouth. After that, fresh aroma with a hint of hineyoshi, umami, and supporting astringency spread and disappear. The sweetness crossed with astringency is profound. I think I prefer it warmed. I received a pamphlet from the Hyogo Sake Brewers Association in Nada, so I wrote down the information about breweries that are not members of the association, and wrote down the sake I drank and the sake on which I wrote my impressions in a table. Currently, 50 of the 68 Hyogo sake breweries are represented. From this point on, it will be important to make a journey to visit breweries that have not yet joined the cooperative and to get sake that is only sold directly or sold exclusively in the local area. It would be interesting if all the breweries in Hyogo Prefecture were to join, but that's all.
