This sake is made from Hitogochochi produced in Matsumoto City and brewed using the Yamahai method.
It is served at room temperature. It has a refreshing dry taste with a sourness that is unique to Yamahai. When warmed up to lukewarm, it turns into a more acidic sake with a light sweetness. Tomorrow, I will drink it cold.
