This sake is from a brewery called Hayashi Honten in Gifu Prefecture. This is the first time I have tasted this brewer's sake. The name "Suizuan" means "green peak" and is said to be based on the wings of kingfishers that live in the mountains at 3,000 meters. The label says it has a unique sour taste and is fruity like melon. Well, what does it taste like?
Let's try it! The aroma first gives off a hint of acidity.
I also feel a lot of acidity when I put it in my mouth. It's very citrus 🍊! I definitely felt the melon in the aftertaste. There is also a sense of gas that seems to pop in the mouth.
It is said to be a limited edition sake! I have a weakness for this word!
I came across another sake that I highly recommend: ‼️
