DHC Brewery comes to mind when I think of sake in the North District, but this is a different brewery. This is the first time I've had the pleasure of meeting this brewery.
Even if we subtract the fact that it is a pure sake, it has an uncharacteristic strength that is not typical of Niigata sake.
The mild acidity is fresh. Delicious!
Goes perfectly with wild vegetable tempura, etc.!
Limited edition of 1000 bottles.
