Doburoku at Farmer's Inn Okuyama in Sekikawa-mura, Iwafune-gun It was about a year ago that I first learned of and had a taste of this doburoku at a certain chicken restaurant in Niigata City, which I had visited previously. We met again after a long time at a fashionable supermarket in the suburbs of Niigata City. This Matsurigoto is a fast brewing muddy sake, there is also a Bodai-hashiro brewed Haru, which is sweeter 🤔. The first sip of the supernatant has a strong sourness like rice vinegar, followed by a savory rice flavor like okaki (rice crackers) 🍘. I don't feel much alcohol and have the impression that it is a sweet sake with a strong sourness. After stirring, the taste blends well and the alcohol is gradually felt. Dry amazake. It is thick and mushy. It is not so much that you are drinking sake, but more like you are receiving food for life. I tried it in a highball, which is the recommended way to drink it... If you want to enjoy it with snacks, this is the way to go👍 I think it only goes well with pickles and root vegetables on its own, but with a highball, you can enjoy it with a variety of dishes 🤗.
