2024 Junmai Ginjo Black Bottle with White Box The melon-like standing aroma is gorgeous but refreshing. When you drink it, the beautiful sweetness and umami spread out, and you can enjoy the long aftertaste and think, "Oh, this is delicious! It was brewed last winter and aged at a low temperature, but it does not have an aged aroma, and is easier to recommend than most hiyaoroshi. ⭐️⭐️⭐️⭐️⭐️-⭐️ This sake is brewed at the Food Industrial Technology Center of Hiroshima Prefecture under a specific theme each year. I guess it is like a prototype for other sake breweries. I thought it was outstanding this year, but since it is a public institution, I would like to see them try various challenges, such as brewing a sake with a gassy taste, which is rare in Hiroshima sake, by injecting carbon dioxide gas, or making an extremely sweet sake by increasing the amount of koji. The rating is minus one because I feel that many of the themes in recent years have been honorable.
