Shirasagi, limited to Yuwaku Onsen, is available in freshly squeezed and fire-aged versions. It is in 300 ml bottles due to refrigerator and other circumstances. I bought it in the summer, but because it was a small bottle, it went to the back of the house. Finally, I decided to drink it now that I am back in Ishikawa. Local sake is always on the back burner.
Yachiya's sake is very much Kanazawa's sake, with many brands such as Kagatsuru and Maeda Toshiie that remind me of Kanazawa. This one is a tie-up with Yuyuu Onsen, a hot spring located in the backwaters of Kanazawa. It has a rather gorgeous ginjo aroma and a delicious rice flavor.
