We also reserved a bottle of next year's Hatsu Shibori Ginjo and Daiginjo just after bottling.
We bought it because it was the first anniversary at a sake brewery that never fails to deliver!
First of all, it is delicious!
It is easy to drink and goes down smoothly on the palate, and although it is very ricey, it is not too sweet, and the aftertaste is crisp and spicy, finishing with the umami of the rice.
As the manager said, it was a good cost-performance sake with a deep flavor.
